Continue this panna quota as follows: take a pan, put it on the fire, and pour the cream in it. This must be a sweet one for cooking. Be very careful, it must be made of cow's milk, not vegetable milk. Next, add the sugar, lemon and / or orange peel and essence in the same container.

Mix the panna cotta composition until it starts to boil. Then, turn off the heat, remove the lemon peel and orange (if you used pieces) and after 3 minutes add the hydrated gelatin. Mix everything very well, with a whisk, until it dissolves and incorporates very well all the ingredients for panna cotta.

Now it's time to pour the composition into glasses. They must first be moistened with cold water, in order to remove the dessert more easily at the end. Do everything carefully and do not fill the cups until they refuse. Panacotta cups are refrigerated for 4 hours or even overnight.

When the panna cotta is removed from the fridge, you must have a sauce ready. This time, we refer to one made of strawberries, but you can always make panna cotta with raspberries or other fruits. The strawberries are mixed together with the fine sugar / cough, with the help of a special robot, to obtain a fine puree.
