Panna cotta with mango and caramelized ginger

Panna cotta is a dessert that I really like. I like that it can be served with absolutely any sauce you can think of or from your favorite, from chocolate or vanilla to the most exotic fruits.

Today I propose an absolutely sensational combination, you will feel how the taste buds go crazy :)))

Panna cotta with mango and caramelized ginger

Ingredients:

  • For panna cotta:
  • 200 ml whipped cream
  • 100 ml of milk
  • 1 tablespoon sugar
  • vanilla essence
  • 2 teaspoons jelly
  • For mango sauce:
  • 1 sea mango
  • 1 tablespoon sugar
  • For caramelized ginger:
  • 1 piece of 2 cm ginger
  • 1 tablespoon sugar

Preparation Panna cotta with mango and caramelized ginger:

We will first prepare the mango sauce :

Mango is cut on both sides of the seed. Grow the pulp of the fruit horizontally and vertically, as if we were making a grid, then press the peel down. Peel the mango cubes from the peel and place them in a bowl where we will pass them well with the vertical mixer. Add the sugar, mix and boil over low heat until the juice decreases and reaches the desired consistency.

  • I didn't cook it for more than 5 minutes
  • The mango fruit I used was very well ripened and very sweet. If you consider it necessary, you can add more sugar.

Put the mango sauce in the fridge to cool very well.

Panna Cotta:

We hydrate the gelatin in cold water, so that it is well covered with water.

In a bowl, mix the whipping cream, milk and sugar. Put on low heat and boil without boiling until the sugar melts. Set aside, wait for it to cool a bit and add hydrated gelatin. Homogenize and flavor to taste with vanilla.

Caramelized ginger:

Ginger is cut into very thin strips. Put together with the sugar and 2 tablespoons of water in a saucepan over low heat. Stirring constantly, keep it on the fire until the water evaporates and the sugar caramelizes. Turn over on a piece of paper, bake and leave to cool.

Panna cotta and mango sauce are put in glasses, with a break of a few minutes in the freezer between layers. The caramelized ginger is crushed and sprinkled in each glass.
