Panna Cotta with pomegranate jelly

I had a pomegranate bought with the idea that I would use it for a salad. It wasn't to be! I mean, the salad was, but without pomegranate :)) So, I changed direction and thought of using it for a dessert recipe. And panna cotta seemed to me the most suitable choice 😉

Panna Cotta with pomegranate jelly

  • 400 ml whipped cream
  • 100 ml of milk
  • 3 tablespoons sugar
  • 10 g gelatin
  • vanilla essence
  • For pomegranate jelly:
  • 1 pomegranate
  • 3 tablespoons sugar
  • 1 teaspoon jelly

Preparation of Panna Cotta with pomegranate jelly:

Pomegranate jelly:

Pomegranate is cut in half. Pull a little from the edges of the pomegranate half outwards, then with a wooden spoon beat in the pomegranate peel until all the berries fall into the bowl I put underneath. The beans are then placed in a higher bowl and passed well with the vertical blender. We strain the juice obtained.

Mix the pomegranate juice with the sugar and put the bowl on low heat. Boil for a few minutes, until the sugar melts. Set aside, let cool, then add the gelatin that I previously hydrated in cold water. Let cool.

Panna Cotta:

Cream for whipped cream and milk mix and put in a bowl over low heat. When it has reached boiling point, add the sugar and cook for 1 minute.

Set aside and add hydrated gelatin in a few tablespoons of cold water. Flavor to taste with vanilla essence, mix and leave to cool.

Panna cotta and pomegranate jelly are put in glasses, with a break of a few minutes in the freezer between layers.
