Parisians stuffed with apples, carrots and nuts

Parisians, croissants, rolls… tell them how you want.
They are so good, especially when the dough is so fluffy.
I combined some sweet apples, a little carrot hydrated in orange (a great tip I found out from the charismatic Vlăduț from Neața) and some ripe nuts. I slipped some gingerbread spices into this composition and filled these fluffies.
I don’t know how much I convinced you to try them, but I guarantee you’ll ask twice!

Ingredients:

  • 300 ml of sweet milk
  • 20 gr of fresh yeast
  • 1 pinch of salt
  • 3 lg raw sugar
  • 2 chicken eggs
  • 500 gr wheat flour
  • 1/2 cup oil
  • filling:
  • 6-7 apples
  • 80 gr raw sugar
  • 100 gr walnut kernels
  • 2 suitable carrots
  • 200 ml orange juice (fresh)
  • gingerbread spices:
  • cinnamon / ginger / anise
  • 100-150 gr simple biscuits
  • 1 egg for greased

Preparation

Heat the milk lightly so that it does not get hot.
In a bowl, put the yeast, 1 pinch of salt and sugar. Add a little warm milk (be careful not to be hot) and set aside for 10 minutes.
In a large bowl, sift the flour. Make a place, add the mayonnaise, eggs, and the rest of the milk. Stir initially with a whisk, then knead by hand, gradually adding and incorporating the oil. The dough should not be very dense, rather soft. Depending on the type of flour, the size of the eggs, you may need another 50 grams of flour. Cover the bowl with a clean towel, set aside the dough until it doubles in volume.
Meanwhile, wash and peel the apples and carrots. They are placed on a large-mesh grater.
Carrots are hydrated in orange juice. Then add over the grated apples, along with the raw sugar.
The biscuits are finely ground on the robot. Add 2 lbs of spice mix.
The walnut kernel is chopped on the robot, depending on the granulation you like. I like to smell walnuts, but some people prefer ground walnuts more.
Biscuit breadcrumbs are added over the composition of apples and carrots and mix with a spatula. The breadcrumbs will absorb the apple juice that will bring an extra sweetness and will spice up the composition due to the spices incorporated in it.
Set it aside.
Prepare a tray with baking paper. Turn on the oven, set the temperature to 180 degrees C.
On a worktop, pour the composition. Slice 6-8 pieces of the same size.
Spread each piece in a rectangular shape, one side is cut into strips approx. 1/3 of the length of the dough. Place 2-3 lb apple composition, roll, then place in the pan. Do the same with all the other pieces. Grease with beaten egg, sprinkle with a spice powder.
Put in the preheated oven, bake at 180 degrees C for 30-40 minutes. When they are nicely browned, turn off the heat, remove from the oven, grease with a little water, then cover with a clean towel. Leave to cool.
Serve with great appetite, with a cup of lemon tea or according to your preferences!
