Pasta with broccoli and sour cream
- 250 pastes (rifles, butterflies, pens, etc.)
- 350 g broccoli fraged, without stem
- 200 g cream cheese
- 200 ml sweet cream min 30% fat
- Chilli flakes
- 1-2 cloves of garlic
- 100 g grated cheese / cheese
- 50 g parmesan
A delicious lunch or dinner can consist of broccoli pasta with sour cream and cheese sauce, a simple and fast dish, extremely tasty and which introduces vegetables in the diet less appreciated by the little ones, first of all. To make broccoli more enjoyable and interesting for children, but also to cook it well, this is one of those broccoli recipes that are worth trying.
Broccoli is not exactly the simplest vegetable, because it is easy to overcook, becoming too soft, remaining tasteless and catching a more yellowish, unpleasant color. When prepared correctly, it has a toothy texture, meaning it is slightly crunchy, and stays green, being ideal for pasta with cheese sauce.
Who doesn't like a white, rich, delicious and creamy cheese sauce with pasta? It uses cream cheese and cream, but also cheese or other dairy products to give creaminess and an exceptional taste. We mention that from the quantities mentioned above for the broccoli recipe you will get 3 servings.
How to prepare broccoli? If you want to make it separately from pasta, you will clean it from the back, that is, you will cut it in those green bouquets and put a pot of water to boil, and when it boils you throw them inside and leave them for a maximum of 5 minutes, after which they drain in cold water to keep the vibrant green color in recipes with broccoli. Another way to prepare it is to put it during the cooking of the pasta, in the same pot, as we will describe in the following.
Bring water to a boil using a medium saucepan from a set of pots where you pour 3 liters of water and add two teaspoons of salt to leave the pasta to taste. You will also need to prepare a pasta cream sauce, which should be ready before it is cooked.
So, while boiling the pasta water with broccoli, you can mix in a deeper pan the cream cheese, sweet cream and garlic that you crush or chop, adding a little salt and a little pepper, possibly some hot pepper flakes, if you like the food to "track" your tongue. Heat the preparation over low heat and boil it for 5 minutes, in order to reduce this pasta cream sauce a little more.
Returning to the pot of water, when it reaches the boiling point, throw the pasta in it and look at the clock, to know for sure how many minutes you leave them to boil and when you add the broccoli florets for the pasta recipe with sour cream and cheese. They should be placed in boiling water for three minutes before the pasta is ready, leaving them for about 5 minutes, as the water cools when you add something inside and needs little time to return to the boiling temperature for pasta with broccoli.
Turn off the heat and turn off a cup of boiled pasta water with white sauce and chicken, to liquefy the sauce as needed, draining the pasta and broccoli. They are placed in the deep pan containing the pasta broccoli sauce with sour cream, stirring gently so as not to crush the vegetables or pasta. Leave it on low heat for about a minute, then remove from the heat and add the cheese or grated cheese to the pan. These will melt nicely and will complete any broccoli and pasta recipes.
