Peasant pie with potatoes

  • * 4 medium potatoes
  • * 50 g butter
  • * milk
  • * salt and pepper
  • * nutmeg
  • * For the filling:
  • * 1 chicken breast (small)
  • * 1 onion
  • * 3 cloves garlic
  • * 1 carrot
  • * 2 tomatoes
  • * 1 or
  • * salt and pepper
  • * 100 g cheese
  • * basil and oregano

Method of preparation:

Peel the potatoes, cut them into cubes and boil them in salted water. When they are boiled, drain the water, strain and mix with butter and a little hot milk. Season with salt, pepper and nutmeg to taste

Finely chop the onion and garlic and put it in a few tablespoons of olive oil. Add the grated carrot, a little water and cook all together. The tomatoes are scalded, peeled and blended. The juice obtained is poured into the pan and homogenized. When it starts to boil, add the minced meat and mix until it dissolves. If necessary, add a little water and simmer until all the juice is reduced and the meat is cooked. Season with salt, pepper, basil and oregano. Leave to cool, put the egg and mix.

Pour the composition into a heat-resistant dish greased with butter and level. Cover with mashed potatoes and a generous layer of grated cheese.

Bake over medium heat until the cheese melts and has a reddish crust on top.

Serve hot.
