I'm so glad I found a way to trick my people into eating spinach that you won't even realize! :)) Whenever I have the opportunity I make a pie with salted cheese, to which I add spinach, so much so that it is not detectable by sensitive tongues. :))
I like to make pie with salted cheese, because I can play as I want with the ingredients and types of cheese. This time I opted for this recipe, inspired by Andreea .
For the dough:
~ 200 g flour
100 ml of milk
1 teaspoon dried yeast
1/2 teaspoon salt
1/2 teaspoon sugar
1 tablespoon olive oil
In a bowl, mix the flour with the dry yeast, salt and sugar. Add warm milk and oil and knead an elastic and homogeneous dough that does not stick to your hands. Cover with a towel and leave to rise until it doubles in volume.
The dough can also be prepared in a bread machine.
For the filling:
200 g salted cheese (telemea)
2 tablespoons sour cream
salt and pepper
In a bowl, mix the crushed cheese with the egg and sour cream. Add the chopped spinach and dill, salt and pepper to taste.
The dough is divided into 2. Each piece of dough is spread with the rolling pin in an oval sheet about 0.5 cm thick. Put the cheese in the middle of the sheet, leaving the edges free, about 3 cm. Fold the edges over the filling so that the ends meet in the middle, then give the shape of a boat.
Place the boats in a tray lined with baking paper and leave to rise for a few minutes. Grease with beaten egg yolk with a little milk, sprinkle with poppy seeds and sesame seeds and put in the oven over medium heat until golden brown.
Excellent, both hot and cold.
