A simple cake recipe, combined with delicious pineapple and ready delicious cake. 😉
- 2 eggs
- 100 g sugar
- 9 tablespoons oil
- 9 tablespoons milk
- 10 tablespoons flour
- 1 baking powder
- lemon extract
- pineapple from the compote, enough to cover the bottom of the bowl in which we bake the cake
- 3-4 tablespoons sugar for caramelization
Preparation Pineapple cake:
Remove the pineapple from the compote and drain it in a strainer or on a plate lined with absorbent towels.
Mix eggs with a pinch of salt until they turn white and double in volume. Add sugar and lemon extract and mix until you get a consistent foam.
Lemon extract can be replaced with any other flavor you like. I really liked the combination of lemon and pineapple, I will do as you like. 🙂
Gradually add the oil, then the flour mixed with baking powder, alternating with milk. We will get a composition like sour cream.
In a smaller bowl, melt the sugar. When it has become liquid, pour it into the bowl in which we will bake the cake and quickly spread it over the entire surface. It is not necessary to be uniform.
The caramel will harden very quickly in contact with the bowl, so either move very quickly or heat the bowl a little forward.
Place the pineapple slices on the bottom of the bowl, then cover with the cake composition. Put the dish in the oven over medium heat until the cake is lightly browned on top. Leave to cool in the pan.
The bowl in which I baked the cake is a ceramic bowl, with a capacity of 1.2 liters. On the label it says that it has a diameter of 27 cm, but it seems smaller to me 😀
After it has cooled, place a plate over the bowl and with a firm movement we will turn the cake over. Let it cool very well and if we consider it necessary, we will syrup it with the pineapple juice.
