Recipe Plum cake
- 2 eggs
- 2 tablespoons sugar
- 2 tablespoons oil
- 2 tablespoons flour
- 2 tablespoons coconut
- 1 vanilla sugar
- 1/2 teaspoon baking powder
Since the plums appeared in the market, I have bought several times, but they have never reached a cake , because I was fighting with my sons on them. :))) But last time I didn't find them so good, I was a bit tasteless, I don't know why. A good opportunity to make the dream cake , a cake with a fragrant and fluffy plum .
The quantities are for a small vessel of 15/25 cm, you increase proportionally with the size of the tray you have at your disposal.
Preparation Plum cake:
Cut the plums in half, remove the seeds, then sprinkle with a little sugar (only if necessary, if the plums are not very sweet) and cinnamon.
Whisk the egg whites with a pinch of salt. Add the sugar and mix until you get a thick and shiny foam, so for pandispan, you know. 🙂 Mix the yolks with the oil and pour over the egg white foam. At the end, incorporate the flour mixed with baking powder and coconut, mixing lightly with a spatula, with movements from top to bottom.
The composition is poured into the bowl greased with oil and lined with flour. You can also use a tray lined with baking paper.
Put the plums on top and bake on medium heat (150 degrees, electric oven with ventilation) for about half an hour, until the plum cake is nicely browned on top.
Leave to cool in the pan, powder with sugar and portion as desired.
