Poppy and lemon roll, filled with berry sauce

Today I recommend a roll with poppy seeds and lemon, filled with berry sauce. It is a very easy to prepare dessert, very tasty and can be easily adapted to everyone’s tastes.

I did not use sugar, but you can use the same amount. If you prefer something sweeter, then you can finally powder the roll with vanilla sugar or you can garnish with chocolate.

If the poppy is not to your liking or you prefer without lemon, then you can prepare a simple sponge cake top and fill it with what you want. But I recommend this combination: poppy + lemon + berries.

Ingredients:

  • wheat:
  • 6 chicken eggs
  • a pinch of salt
  • 6 lg flour
  • 2 lg mac
  • 6 lg oil
  • 50 ml of fresh lemon juice
  • 1 baking soda powder
  • 4 lg stevia sweetener
  • fruit sauce:
  • 400 gr blackberries, blueberries and blackcurrants
  • 50 ml water
  • 2 lg stevia sweetener
  • 1 lg starch

Preparation

Separate the egg whites from the yolks. The egg whites are mixed with foam, adding a pinch of salt. When they become dense and fluffy, add the sweetener. Continue mixing until well incorporated.
The yolks are mixed with the oil. The composition is added over the egg whites, incorporating easily.
The flour is mixed with baking soda powder. Sift over the egg mixture and mix gently. Add poppy seeds and lemon juice.

If you don’t like poppy seeds or lemon flavor, you can omit these ingredients, but I guarantee it’s a tasty combination!

Once the composition is homogenized, pour it into the baking tray and put it in the preheated oven for 20-25 minutes.

Be careful not to leave more, the countertop will become dry if you keep it longer. Being in a thin layer, it will bake quite quickly and nicely.

Once baked, take it out of the oven, turn it over on a clean kitchen towel, remove the baking paper and roll it tightly in a napkin, so warm. Leave to warm.

Meanwhile, prepare the fruit sauce. Put the berries in a bowl, mix the sweetener with water and starch. Pour over the berries. The composition is transferred to the fire, leave for a few minutes until the composition begins to coagulate slightly. Do not leave too much, it is important to keep the taste of fresh fruit, but to be a bound sauce.

Do not use fruits from crop production, I use berries, smaller and more fragrant. You can omit the starch, the berries have a lot of pectin, but you have to cook a little more to bind the sauce.

Leave the sauce to cool slightly. Don’t worry if it’s too liquid. As it cools, it coagulates, plus the countertop will absorb only well.

Unwrap the dough sheet, spread the fruit sauce and roll again. Dress in cling film and leave until served.
It is a very tasty and aromatic roll, without sugar and easy to prepare!
