1 kg of potatoes
1/2 chicken breast
1 large onion
1 cup tomato juice
salt and pepper
Peel the potatoes and cut into cubes. Chop the onion and put the carrot on a small grater. Cut the chicken breast into cubes.
Fry the onion and carrot in a few tablespoons of olive oil. Add the meat cubes and potatoes. Cook a little more together, then "quench" everything with tomato juice and water as needed.
Season with salt and pepper to taste, cover with a lid and cook until the meat and potatoes are cooked, and the stew has reached the desired consistency. We like it with more juice. 😉 Add the finely chopped greens, add 2 more boils and set aside.
Serve hot, with a pickle or cucumber in vinegar.
