Potato mousse is a dish of Balkan origin, with a relatively simple recipe, with most of the ingredients that are kept from one example to another, in no case missing potatoes and meat. Most of the ingredients are usually found in the pantry and refrigerator, and do not cost much, becoming a nutritional option and rich in fats and proteins, both with a very good taste.
The preparation and assembly for the potato bite with pork resembles that of lasagna, involving the production of sauces and their placement on layers before baking. It can use bechamel sauce, cheese or Parmesan, there are also recipes in which potatoes are replaced with zucchini, eggplant, tomatoes, some people prefer moussaka with mashed potatoes, for example.
Boil the potatoes in their skins and leave them to cool well, being able to prepare them in advance, after which the skins will be removed and 5 mm thick slices will be cut. Some recipes are moussaka with puree, easing, to some extent, the chef's work.
While the potatoes are boiling, you can move on to the next step, which involves heating the oil in a pan, over medium heat, where you put the crushed garlic and chopped onion and sauté them. Add a little salt and leave for 3 minutes, stirring occasionally.
Add the paprika and chili flakes, mixing well with a spatula.
Add the minced pork and fry for 10 minutes until the resulting water drops.
Add the tomato puree and mix the pork mix with the potatoes well in the oven.
Season to taste with salt and pepper, continuing to boil for 5 minutes, during which time incorporate the mixture.
Remove the pan from the heat and add the finely chopped parsley, mixing well.
Egg and cheese sauce is a much simplified option that involves mixing the eggs with the aim and adding sour cream and grated cheese, seasoning with salt.
Preheat the oven to medium stage ( for the electric oven at 170 degrees) and start mounting.
Grease the walls and bottom with butter in a heat-resistant pan.
Put a first row of sliced or crushed potatoes for mashed potatoes with mashed potatoes.
On top, add half the amount of meat with sauce (or a quarter, depending on how wide the cooking pot is and how many rows come out) for the meat and potato bite.
Add a new layer of sliced potatoes or puree.
Put the remaining meat and level it nicely, on top of it adding the last layer of sliced potatoes or puree.
Top with the egg sauce, sour cream and cheese, spreading it evenly on the potato bite with pork.
You will put the tray of potatoes with meat in the oven where you will keep the temperature of 170 – 180 degrees (medium heat) for 35 minutes or until it browns on the surface.
When the dish is ready, turn off the heat and remove the pan from the oven, leaving to cool for at least 15 minutes.
Mashed potatoes with minced meat and cheese can be served hot or hot, but to see those layers more beautifully, it would be advisable to let it cool before serving.
If the pork is not to your taste, you can adapt the recipe to a chicken bite or one of beef or turkey.
