Potato bite with chicken breast and liver |
* 7 medium potatoes
* 100 g telemea
* 50 g butter
* 2 eggs
* nutmeg and ginger
* salt
Boil the potatoes in their skins in salted water. When they are cooked, they are removed in a sieve, passed under a stream of cold water and peeled.
Mix the potatoes in a bowl with the telemeau, butter, eggs, salt, nutmeg and ginger. It is homogenized. If the puree is too thick you can add a few tablespoons of hot milk. Add salt only if absolutely necessary

* For the filling:
* 1/2 chicken breast
* 250 g of chicken liver
* 1 onion
* 3 cloves garlic
* 2 large tomatoes
* 1 pepper
* 1 carrot
* basil and oregano
* salt
Finely chop the onion and garlic and fry in a few tablespoons of olive oil. Add the grated carrot on a small grater and the diced pepper. Tomatoes are scalded, peeled and mixed. The juice obtained is poured over lightly hardened vegetables.
When the mixture boils again, add the chopped chicken breast and diced livers. Homogenize, cover with a lid and let it boil. If necessary, add a little water. During cooking, adjust the taste of salt and season to taste with basil and oregano.
* For decoration:
* ~ 100 g cheese
* green parsley
In a heat-resistant bowl greased with butter, put a layer of mashed potatoes, meat filling with liver and cover with the rest of the puree. Sprinkle the grated cheese on top with a large grater and put in the oven over medium heat until the cheese melts and browns.
Serve hot, sprinkled with chopped green parsley.
