potato pancake no flour

The other day I had a craving for some potato crackers . But wanting to avoid frying, I said to myself: "what would it be like to combine the wholemeal cake recipe with the pirosti recipe?" :)) And I combined it… and here's what came out.

  • For the dough:
  • 300 ml water
  • 250 g wholemeal flour
  • 50 g of wheat bran
  • 50 g of oatmeal
  • ~ 100 g white flour
  • 10 g dry yeast
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 1 tablespoon oil
  • For the filling:
  • 4 medium potatoes
  • 1/2 clove of garlic
  • salt and pepper
  • 50 g butter

Preparation Cake with potatoes:

It took:

Yeast mixed with sugar dissolves in a little warm water. Mix the bran with flour and salt. Pour in the middle the dissolved yeast and the rest of the water. Knead an elastic dough, slightly sticky. During kneading, add the oil. Leave to rise until it doubles in volume.


Boil the potatoes in their skins in salted water. When they are cooked (check with a fork), remove and pass under a stream of cold water, then peel. Put in a bowl and strain, then add butter, crushed garlic, salt and pepper to taste.

The dough is divided into small pieces, which are spread in a thin sheet on a lightly floured table. Put the filling on half of the sheet, cover with the other half ungreased and glue the edges by pressing with your fingers.

For baking I used the ceramic pan, over low heat, covered with a lid.

Very good both hot and cold.
