Potato salad with baked kapia peppers

This recipe is part of the category of quick recipes! It's so easy, it's filling, and baked kapia peppers give it a special taste! We like it and we do it whenever we don't have time for something sophisticated, but we have to satisfy our hunger somehow. If you don't want to fast, you can also add boiled eggs, raw onions if you like (I don't like it) and whatever else you want!

Ingredients:

  • 4-5 suitable potatoes
  • 3 capsicums
  • 2 cucumbers
  • 100 gr pitted black olives
  • 2-3 sprigs of green parsley
  • 2-3 green basil leaves
  • salt
  • pepper
  • olive oil
  • 1 teaspoon mustard
Method of preparation:
Peel the potatoes, then cut them into cubes.
Put them to boil in a pot with water and a little salt, until they are penetrated.
When they are cooked, drain the water, leave them to cool until they are slightly warm.
Bake the kapia peppers, put them in a bowl and leave them covered for about 20 minutes.
Peel a squash, grate it and cut it into small pieces.

Cut the olives into slices.
Finely chop the parsley and basil.
Put cucumbers, peppers and olives in a bowl.
Stir them, then add the potatoes.
Season everything with salt, pepper, add a little olive oil and mustard.
