- 3 egg whites
- 120 g of sugar
- 150 g ground walnuts
- 1 tablespoon flour
- a few drops of almond essence
- 1 vanilla sugar
- a little powdered sugar for finishing
For a long time I kept trying to make almonds like the ones from the confectionery at home. Sweet, fragrant, crunchy on the outside and soft on the inside. I didn't succeed until yesterday when I found the recipe, completely different from what I was doing until then, in an old cookbook. I mean, you could say I had the recipe under my nose, but I didn't know how to look for it! :))))
I made the almond recipe from 3 egg whites, but I tell you to double the quantities so that you won't be sorry and you will mention Miha! :))
In a saucepan mix the ground walnuts, sugar and vanilla sugar. Add the beaten egg whites and a pinch of salt. Homogenize, then put the pan on medium heat. Stirring continuously with a wooden spoon until the composition reaches boiling point.
Set aside and mix until the composition cools. At some point you will feel like I let go of your hand, but drink a mouthful of coffee and give it a go. :)))
When the composition cools it will become shiny and creamy. Add the almond essence and flour. It is homogenized.
Using a posh, place small, round almonds in a tray lined with baking paper. You can put them with a teaspoon, taking care to give them a round shape, they will come out exactly the same and get rid of washing the pos. :))
Powder with sugar and put the tray in the oven over medium heat for about 20-25 minutes, until lightly browned "on the sole" and become firm to the touch. Allow to cool then peel off the baking paper.
If you want and if they get there you can stick them 2 by 2 with a chocolate cream or even with jam. 😉
