How to prepare Quiche with leeks and cheese:

First prepare the dough because it will be cold for at least half an hour.

In a large bowl, sift the two types of flour, salt and nutmeg powder. (Wholemeal flour gives it a better taste, so I recommend using it).

Add the diced butter and knead until crumbly. Add the beaten egg with cold water and knead until smooth. It should not be kneaded excessively because it will lose its fragility. The dough obtained is wrapped and left to cool for at least half an hour.

Then remove, spread in a thin layer and place in a baking dish. I recommend using a ceramic one, but if you don't have one, you can use another tray.

Once placed in the shape, it is pricked from place to place with a fork. Bake in the preheated oven at 170 degrees C for 10 minutes.

Meanwhile, prepare the filling.

In a bowl, add sour cream and eggs, then mix vigorously. Add salt depending on how salty the cheeses are, so pay attention to this aspect.

* I used a mixture of cheeses: cow's cheese, bellows cheese, telemea.

Remove the pre-baked top, sprinkle the cheese on the entire surface of the tart.

The leeks are cleaned and washed, cut into thin slices and placed over the cheeses, as well as the slices of sausage and peas.

Lightly pour the egg mixture with sour cream, then grate a little cheddar.

Bake the tart in the oven at 170 degrees C, baking up and down for 20-25 minutes.

Then remove, leave to cool slightly, then serve with radishes or green onions. It is just as good and cold.
