I don't know if an avid carnivore can believe me, but these quinoa meatballs are a much healthier and tastier alternative to traditional meatballs. I prepared them in 2 variants, in the oven and fried in a pan with a little oil. They turned out just as good, as if the fried ones were a better idea. Well, damn it! :)))

Ingredients:

  • 75 g quinoa
  • 1 or
  • 1 handful of spinach
  • chopped green parsley
  • a few cloves of garlic
  • salt and pepper
  • To be served:
  • arugula salad with spinach
  • or boiled eyes

Preparation Quinoa meatballs:

Quinoa is placed in a strainer and washed under running cold water, then boiled in salted water for about 20 minutes. Put it in a strainer and let it drain well.

In a bowl put the well drained quinoa, add the egg, crushed garlic, finely chopped spinach and parsley. Salt and pepper to taste and mix very well.

With wet hands, form meatballs of the right size and place them in a tray lined with baking paper or fry them in hot oil, as you prefer. If you choose the oven version, sprinkle them with a little olive oil and put the tray in the oven for about 15 minutes on medium heat. Turn them on the other side and leave for another 15 minutes.

Serve hot with arugula salad with spinach and boiled egg.
