Raspberry roll cookies

A roll with a fluffy cocoa top and a fruit cream, in this case raspberry, for me is the perfect dessert, perfect for any day, an anniversary or even for the holidays! Not too sweet, because they are not too sweet desserts, but with pieces of fresh raspberries inside to complete it perfectly, you can't go wrong with it! If you like it, you can try it too!

Ingredients:

For the countertop:

  • 5 eggs
  • 5 tablespoons sugar
  • 5 tablespoons oil
  • 5 tablespoons flour
  • 2 tablespoons carrot powder (or cocoa)
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla
For raspberry cream:
  • 250 gr raspberries
  • 4 tablespoons sugar
  • 1 tablespoon starch
  • 200 ml whipped cream
  • 140 gr Greek yogurt
  • fresh raspberries
  • 30 gr dark chocolate + 30 ml cream for whipped cream
Method of preparation:
Separate the eggs, mix the egg whites with a pinch of salt until the volume.
Gradually add the sugar, mix until the meringue becomes shiny.
Stir in the yolks and vanilla, then the oil.
Sift the flour with the grater powder and the baking powder, gradually incorporate them over the eggs, with a silicone palette, with slow movements.
Wallpaper a 34/36 cm tray with baking paper.
Pour the composition, level it, put the top in the hot oven at 170 degrees for 15 minutes.

After this time, take it out of the oven, peel off the hot paper top, roll it tightly and wrap it in a damp kitchen towel or baking paper. Let it cool.
Raspberry Cream:
In a saucepan put the raspberries with the sugar, transfer them to the heat.
Stir continuously until the sugar is completely dissolved.
Take the raspberries off the heat, pass it in the blender.
Put the mashed raspberries in a sieve, remove the seeds.
Turn the obtained puree into a saucepan, put it on the fire.
Dissolve the starch with 2-3 tablespoons of cold water, put it over the puree, stir continuously until it thickens.
Remove from the heat, cover with foil and let cool.
Cream for whipped cream, cold, mix it until it takes on a little volume.
Add the Greek yogurt, mix until the cream becomes frothy.
At the end, incorporate the cold raspberry jelly.

Stop 2-3 tablespoons of cream.
Unfold the top, put the cream and level it.
On a saucepan place the raspberries next to each other, then roll as tight as possible.
Wrap in rolled foil and let it cool for 2-3 hours.
Dark chocolate together with whipped cream, melt them on a steam bath.
Remove the roll from the cold, glaze it with melted chocolate.
Put the cream off in a pos, make a few moats.

Decorate it with raspberries and mint leaves.
