The rolled cake, the original recipe, is one of the easiest to prepare and most beloved homemade desserts you can think of. Depending on your preferences, you can prepare the fasting tray, but we must admit that those who have a passion for aromatic dishes will prefer the recipe with butter and milk instead of the one with margarine, oil or water.

Also before we start talking about the rolled cake, it is good to know: the recipe is fully adaptable to your family's preferences, because you can prepare it in the version rolled with walnut, rolled with honey or cake with chocolate and coconut.

For starters, prepare the top for the rolled cake. Separate the eggs and beat the egg whites with the sugar, until a glossy foam is obtained, similar to that for meringue. Gradually add the yolks and then the oil, being careful not to leave.

The flour is mixed with the baking powder and then it is added in the rain in the composition, mixing gently, from top to bottom, until homogenization and complete incorporation.

Take a tray with approximate dimensions of 20 x 30 cm, which is lined with baking paper and filled with the dough obtained. Place in the oven heated to 180 degrees, where it is left for about 20 minutes. Leave to cool and cut the cubes only after it has cooled completely.

To prepare the icing for the cake rolled with coconut, you must mix the milk with the sugar, cocoa and butter, over low heat or on a steam bath. Once the butter and sugar have melted, set the cream aside, let it cool slightly and then add the rum essence. The essence is not added to the hot mixture, because it loses its aroma. The glaze is allowed to cool to room temperature.

Only now take each cube from the counter, roll it through the icing and then through the coconut – this is how the cake rolled in the coconut is prepared. Although it is not necessarily on the list of coconut cakes proper, the discreet flavor it acquires is attractive enough.

If the idea of the coconut rolled cake smiles on you, but you are not a very good friend of chocolate, you can prepare the rolled cake with honey. And if you want to prepare something sweet, you can also adapt the recipe for the fasting rolled cake – it's not complicated at all.

Another trick you can use is to use a cake tray for this type of countertop; by preparing two such countertops, with a coconut cream between them and with an abundant coconut decoration on top, you can get a quick and delicious cake.
