Nothing better than a recipe for telemea and dill pies 🙂

This time, the recipe for pies with telemea and dill has no yeast. Instead, it has two ingredients that make it special: cream and a little telemea. The dough came out great, the texture like pastry pies.

- 100 gr butter
- 300 gr fat cream (30%)
- 2 chicken eggs
- 50 gr telemea
- 500 gr wheat flour (+/- 50 gr)
- 400 gr goat’s milk
- 200 gr ricotta
- 100 gr cream
- 1 chicken egg
- 1 leg green dill
- 2 lg semolina

Recipe for pies with telemea and dill
Prepare the ingredients at hand and weigh them.
Cut the cold butter into cubes. Put in a bowl, add cold cream, eggs and knead lightly. Add the grated telemeau and flour. Knead well until smooth and obtain a non-sticky dough. Put in cling film and refrigerate for a few hours. I left him until the next day.
The filling is prepared as follows: in another bowl, crush the telemeau well (you can grate it), add ricotta and cream. Stir vigorously with a whisk, add the egg. Incorporate, then add the semolina. Interfere.
Wash the dill well, finely chop and add to the cheese composition, stirring a little to distribute evenly. Put the cheese composition in the fridge for a few hours. I left it until the second day, covered with a lid.
After they have cooled, the dough and filling are removed.
On a baking sheet, spread half of the dough (the rest is put back in the cold).
Cut circles out of the dough. I used a pasta press. It also works manually.
Place a tablespoon of cheese in the middle of each dough disk, stretch a little, then press the edges. Place each pie in a tray lined with baking paper.
Do the same with the rest of the dough.
Grease the pies with beaten eggs (I used the whole egg, not just the yolk) and put in the fridge for half an hour.
During this time, turn on the oven, at 160 degrees C (electric oven) -180 degrees C at the gas oven.
After they have cooled, the pies are placed in the preheated oven, at the temperatures specified above, I used the top-down baking function for 25 minutes.
Remove when browned and leave to cool.
