* 4 eggs
* 4 tablespoons flour
* 4 tablespoons sugar
* vanilla essence
Mix eggs with sugar and a pinch of salt until they double in volume and light in color, then gradually incorporate flour and vanilla essence.
Put the composition in a tray (25/35 cm) lined with baking paper and bake on medium heat for 10-15 minutes.
Bake the baking sheet on a baking sheet lined with sugar and roll carefully.
* 2 yolks
* 50 ml milk
* 50 g dark chocolate
* 100 g sugar
* 1 tablespoon starch
* 150 g mascarpone
Rub the yolks with sugar until they become like a cream. Add the starch and mix well. We boil the milk and when it starts to boil we add the chocolate. Set aside and stir until it melts. Pour over the egg mixture, stirring constantly. Put again on low heat (or in a bain-marie) and stir continuously until the composition begins to thicken. Let it cool. and it has cooled completely, add mascarpone and mix until you get a fine and homogeneous cream.
After the top has cooled, roll and distribute the cream.
We keep a few tablespoons of cream for garnish.
Roll again and let cool until the cream hardens. Portion into suitable slices and garnish with the rest of the cream.
