A delicious meal for a day of fasting. If you are not fasting, it can be the perfect garnish for a chicken steak.
I am very happy and I thank Madalina for the inspiration, because I managed to make my family eat nettles. Okay, I tricked them into telling them it's parsley :))) but you know how it is… the purpose excuses the means. :))) As a result, the next day I made another portion, in which I dared to put more nettles.
1 cup rice
2 handfuls of nettles
4 cloves garlic
salt and pepper
Finely chopped onion, simmer in a little olive oil and 1-2 tablespoons of water. When it has softened, add the washed rice and 3 cups of water. Leave it to boil, stirring from time to time, during which time we clean the nettles, wash them and scald them in salted water. We put them in a strainer to drain the water well, then we pass them with a fork.
When the rice is almost ready, add the chopped nettles, add salt and pepper to taste and crushed garlic.
