For today a simple and delicious recipe. Rice with tomatoes and ginger, fragrant and slightly spicy, a delicacy that can be served as such on fasting days or as a garnish for meat dishes.
- 3/4 cup wild rice
- 1 small onion
- a few cherry tomatoes
- 1 piece of about 2 cm ginger
- salt and pepper
- 2-3 tablespoons rice oil
Preparation Rice with tomatoes and ginger:
Boil the rice in salted water for about 15 minutes. Put it in a strainer, to drain the water well.
In a frying pan, lightly fry the finely chopped onion in the hot oil. Add the tomatoes cut in half and stirring constantly, keep on low heat until the tomatoes soften. In this phase the skin of the tomatoes will come off, you can put it aside if you want.
Add the boiled rice, then the grated ginger on a small grater, salt and pepper to taste and mix everything very well. Cover the pan with a lid and simmer for a few more minutes.
Serve hot. Good appetite! 😉
