Today I brought a new recipe with strawberries , because only they are the stars now 🙂
A roll with mascarpone and strawberry cream , perfect for a family Sunday. I left it simple, but it can be decorated with whipped cream or white chocolate if you want to give it a more festive look.
- For the worktop:
- 4 eggs
- 4 tablespoons sugar
- 2 tablespoons oil
- 4 tablespoons flour
- a teaspoon of baking powder
- vanilla essence
- For mascarpone cream with strawberries:
- 200 g strawberries
- 100 g sugar
- 100 g mascarpone
- 200 ml whipped cream
- 1 teaspoon jelly
- 1 sachet of vanilla sugar
Preparation Roll with mascarpone cream and strawberries:
Rolled top:
Whisk the egg whites with a pinch of salt. Add the sugar and mix until you get a dense and shiny foam. Rub the yolks with oil and vanilla essence over the egg whites and mix lightly. At the end, incorporate the flour mixed with baking powder, mixing lightly with a spatula, with movements from bottom to top.
Pour the composition into the tray (40/28 cm) lined with baking paper and bake on medium heat for 15-20 minutes, until the top is lightly browned. Remove the top from the tray, put it on a grill and let it cool, then roll it with baking paper.
Strawberry mascarpone cream:
The strawberries over which I sprinkled the sugar are passed with a vertical blender. The puree thus obtained is put on low heat. Boil until the sugar melts. Set aside, allow to cool slightly and place the previously hydrated gelatin in a few tablespoons of cold water.
In the well-cooled strawberry puree, incorporate the mascarpone and whipped cream with vanilla sugar. Mix until smooth.
Remove the baking paper from the cooled countertop and place it on another piece of paper (or on cling film). Put a strawberry cream on the top in an even layer.


Roll the countertop carefully and wrap it in paper, squeezing the paper tightly at the ends.


Let cool for (at least) an hour, then portion as desired.
