Salty caramel cream cold brew for macarons

For a while I have been craving caramel :)) No matter what or in what, any combination is welcome. So when I saw Mihaela's "jugs" I didn't think much before going to the kitchen :))

Salty caramel cream cold brew for macarons


  • 125 g sugar
  • 250 ml whipped cream
  • 3 yolks
  • a little sea salt

Preparation Salty caramel cream:

Put the sugar in a saucepan and caramelize. When it has become liquid, remove it from the heat and pour the whipping cream. Put it back on the fire and stirring gently, until the caramel melts.

Beat the yolks well in a bowl. Stirring continuously, pour the caramel sauce into a thin thread. Homogenize, turn back in the pan and put back on low heat. Stir continuously until the sauce thickens slightly.

Strain the cream (I skipped this stage, I don't remember why :))) distribute it in cups and put it in the fridge for a few hours.

Serve as such, with a word of whipped cream or in various combinations. Do you know how good pancakes are? Mmmm… be sure to do !! :))
