Langosi with cheese
- 500 g flour
- 400 ml of milk
- 50 ml oil
- 1 tablespoon sugar
- 1 teaspoon salt
- 25 g of fresh yeast
- 100 g cheese
- 100 g sour cream
Hungarian langosi – here is a recipe that is hard to resist, especially if you take into account the fact that you can complete them with a lot of types of filling, depending on personal preferences and tastes. Probably the multiple possibilities of adaptation when it comes to a languid recipe makes this food so beloved.
In some areas of the country it is considered that the recipe of scovergi and that of langosi are identical, and that it is only a matter of name, of regionalism. Other people consider yeastless scovergi to be a fasting recipe, while at langos, the recipe includes other fruit ingredients. However, our grandmothers are famous for the recipes for cheese scoops, yogurt scoops or other fluffy scoops that sweetened our childhood. On the other hand, you can prepare, for fasting, the famous recipe for langoustines with potatoes, absolutely delicious and good even on fasting days.
And one last clarification before describing the recipe step by step: we know that some cooks prefer to make donuts with dry yeast, but this time we invite you to opt for the fresh, "live" yeast version, which seems to work differently with the dough.
And if I said yeast: the first step is to gently unmold the milk, heating it gently over the flame of the stove. In the warm milk, put the fresh, crushed yeast, then add the sugar and mix well, until the combination obtained becomes homogeneous. The mixture is left to "rest" for 5-10 minutes, until a foam is formed on the surface indicating the activation of the yeast.
Pour the milk and yeast mixture over the flour and add half the amount of oil and a pinch of salt. Mix well with a spatula, then knead by hand, until the dough becomes supple, elastic, soft and sticky.
Add the rest of the oil over the dough, which is shaped into a ball. The bowl is covered with plastic wrap, and the dough is left to rise for 40 minutes, in a warm place and away from cold air currents.
Grease your hands with oil and take dough balls that fit in the palm of your hand. Each ball is flattened well and then put in hot oil, 2-3 minutes on each side, until it looks golden, beautiful and delicious.
Remove the langos on absorbent paper and bake the rest of the dough balls, after flattening each of them.
While the langoustines are warm, rub them with a little garlic on the whole surface. Add a tablespoon of sour cream that spreads well and add grated cheese. Depending on your preferences, you can add a pinch of pepper on top.
