The other day I started to make some fluffy croissants for children, to sweeten the stay in the house because of the edible bumps and the rainy weather. Probably that rainy weather was to blame for the fact that in the end something else came out :))) I was wrong to cut the dough squares too small for how many walnut fillings I had and then I thought like slices of cake would be better and the croissants can wait :))
- For the dough:
- 2 eggs
- 10 g dry yeast
- 100 g sugar
- 200 ml of milk
- 75 g butter
- ~ 550 g flour
- 1/2 teaspoon salt
- 1 tablespoon candied lemon peel
- For the filling:
- 200-300 g ground walnuts
- 2 tablespoons black cocoa
- 100 g sugar (or to taste)
- 1 teaspoon ground cinnamon

- milk (enough to get a bound composition)
Preparation Cake slices with walnuts:
In a bowl, mix the ground walnuts with the sugar and cocoa, the essence of rum and cinnamon, then pour hot milk on top. Add milk until the desired consistency is obtained.
In a saucepan put the milk, butter, sugar, salt and lemon peel. Heat gently and mix well, melt the sugar and soften the butter. Put the flour in a bowl and mix it with the dry yeast, make a hole in the middle and put the eggs and the mixture with the milk. Knead until all the ingredients are incorporated and obtain an elastic dough. Let it rise until it doubles in volume.
Remove the dough on the table greased with oil and spread it in a rectangular sheet about 0.5 cm thick. We cut the dough into squares, no bigger than the tray in which we will bake the cake. On each square of dough we put a spoonful of filling and spread it evenly.
In the cake pan well greased with oil or lined with baking paper, place the squares of dough, one after the other, in an Indian row. Let it rise again in a warm place for about 15-20 minutes.
Put the pan in the oven over medium heat, until the cake is browned. Allow to cool, then serve by breaking the slices by hand.
For an extra treat 😀 put a tablespoon of caramel sauce on each slice. Guaranteed to be ready in a few hours :))))
