sourdough focaccia recipe no yeast

* 500 g flour
* 10 g of dry yeast
* 2 tablespoons olive oil
* ~ 250 ml water
* 1 teaspoon salt
* 1/2 teaspoon sugar
* For topping:

* 2 tablespoons olive oil
* 1 clove of crushed garlic
* thyme

Mix the yeast with the sugar, a little warm water and 1 tablespoon of flour. Homogenize and let the mayo grow in a warm place.

We put the flour mixed with the salt in a bowl, we make a hole in the middle and we put the mayo, the oil and the rest of the water and we start to knead from the outside to the inside. We will get an elastic and non-sticky dough.

Cover the bowl with a towel and let the dough rise for about 1 hour, until it doubles in volume.

In a tray greased with olive oil, spread the dough by hand. Let it rise again, during which time we prepare the topping. Mix the finely chopped garlic with thyme and pour the olive oil on top. Homogenize and leave to soak until the dough grows.

After the dough has risen, make the holes with your little fingers, pressing with your fingertips close to the bottom of the tray. Pour the topping on top and put in the oven over medium heat until golden brown.

The dough is enough for a foccacia made in a 25/35 cm tray. I used only half of the dough and baked in a small round tray, 18 cm.

It can be used as a dough for pizza or to prepare a delicious homemade bread.
