I was telling you the other day when I made the fluffy croissants with walnuts and cocoa how excited I am about this dough. And as for Easter I want to make cake , not missing from the holiday table, I did a test, to see what I will present in front of the family. :)))
The dough is just like the croissants, so I'll rewrite the recipe completely.
- 2 eggs
- 10 g dry yeast
- 100 g sugar
- 200 ml of milk
- 60 g butter
- 550 g flour
- 1/2 teaspoon salt
- 1 tablespoon candied orange peel
- For the filling:
- 200 g ground walnuts
- 50 g black cocoa
- 100 g sugar (or more, if you like sweet f)
- 1 teaspoon ground cinnamon

- milk (as much as "required" to obtain the desired consistency)
- For anointed:
- 1 yolk
- 2 tablespoons milk
Preparation Cozonac with walnuts and cocoa:
The ground walnut is mixed with sugar and cocoa, rum and cinnamon essence, then pour hot milk on top. Add milk until the desired consistency is obtained.
Mix the yeast with 1 tablespoon of sugar, 50 ml of warm milk and a little flour. Homogenize and leave in a warm place until it swells and blisters appear on the surface.
Put the mayonnaise in the pan of the bread machine, then add the eggs, the rest of the sugar, the salt, the melted and cooled butter, the orange peel, the remaining milk and the flour little by little. Knead until all the ingredients are incorporated and obtain an elastic dough. Let it rise until it doubles in volume.
- If you do not have a bread machine, the dough can be kneaded manually
Remove the dough on a lightly floured table and divide it into 4. Spread each part with the rolling pin in a rectangular sheet about 0.5 cm thick and as long as the tray in which we will bake the cake.
Spread the walnuts on each piece of dough, then roll.
We will have 4 rolls, which we will weave 2 by 2, thus obtaining 2 beautiful and chubby cakes. :))
Put in a pan greased with oil and lined with baking paper, leave to rise in a warm place for about 20 minutes. Grease with beaten egg yolk with a little milk and put in the oven over medium heat until nicely browned on top. Leave to cool in the pan, take out on a grill. Cut after they have cooled completely.
