The market is full of green 😉 I love green, I love salad and I would eat it in any combination. This time I tried something new, although Romanian eggs or laid eggs, to call them more… trendy :)) I have done so far, I have never associated them with salad. Do it too because it's very good, but first of all make sure you have some fresh bread at home, wholemeal, with seeds and crispy crust 😀
- For the salad:
- green salad created
- green onions
- Cherry tomatoes
- olive oil
- lemon juice
- salt and pepper
- For Romanian eggs:
- 2 eggs
- 1 tablespoon vinegar
Preparation Spring salad with Romanian eggs:
Put water to boil in a saucepan. When it starts to boil, add a little salt and a tablespoon of vinegar. The eggs are broken, one by one, in a bowl and put in hot water. Before releasing the egg in the water, mix it circularly with a spoon, forming a vortex. Leave the eggs for 4-5 minutes, until the egg whites coagulate and, depending on how soft we want the yolk, then remove them with a foamer on an absorbent towel, to drain the excess water.
The salad breaks into pieces, as do the spinach and loboda. Tomatoes are cut in half, onions are cut into thin slices. Sprinkle with olive oil and lemon juice, adjust the taste of salt and pepper.
We put Romanian eggs on top and… good appetite! 😉
