* For sheets:

* 100 g flour
* 6 eggs
* 150 g sugar

* 50 g starch

* vanilla essence

* free of rum

* 3 tablespoons cocoa
Beat the egg whites with a pinch of salt, on medium speed, until they froth, gradually adding half the amount of sugar. Increase the speed and beat until the foam hardens.

Beat the yolks with the remaining sugar until they become like a cream, almost white. Add vanilla. Sift the flour and starch into egg yolks, add the beaten egg whites and mix thoroughly.

The dough obtained is divided into 3. In one of the parts put cocoa. If the dough becomes too thick, thin it with a few tablespoons of cold milk.
Bake three sheets in a removable tray (24 cm in diameter) lined with baking paper. Bake for about 10-15 minutes. Remove from the baking paper and leave to cool on a grill. They do not overlap.


* For raspberry mousse:

* 500 g raspberries
* 100 g white chocolate
* 300 ml liquid cream

* 10 g gelatin
We hydrate the gelatin in a few tablespoons of cold water.

We put the raspberries in a blender and mix very well until it becomes puree. Put in a bowl on the fire and bring to the boil, stirring constantly, then pass the puree through a thick sieve. We will get a delicious raspberry sauce, without seeds. 🙂
Put the bowl on the fire again and add the broken chocolate pieces.

Stir continuously until the chocolate melts and the composition is uniform. Leave to cool and when it has reached a tolerable temperature in the finger, add gelatin and mix until it dissolves. Refrigerate until completely cooled, then mix with whipped cream, lightly, with movements from bottom to top.

* 150 ml liquid cream
* 100 g dark chocolate
Melt the chocolate in a bowl over low heat with the whipped cream. We uniform and let it cool until it starts to harden.

* 200 ml liquid cream
* grated chocolate

Both creams, raspberry mousse and chocolate ganache, we divide them into 2 equal parts.
In the tray in which we baked the sheets we put one of the countertop tops. We put a part of the raspberry mousse, then a part of the chocolate ganache.

If the raspberry mousse has not hardened enough while it has been cold, put it in the freezer for a few minutes.

Cover with the cocoa top, then the creams, this time in reverse order, first the ganache layer and then the raspberry mousse layer. Put the second vanilla top, seal with cling film and refrigerate for a few hours, preferably overnight.
Remove the ring from the removable tray, then turn the cake over on the plate.
