For the dough we need:
500 g flour
10 g dry yeast
5 tablespoons sugar
100 g butter
200 ml of milk
Make a yeast mayonnaise with a tablespoon of sugar, a little milk and a little flour. It is left to grow.
We mix the soft butter at room temperature with the rest of the sugar, a pinch of salt and vanilla essence. After the sugar has dissolved, add the yolks one by one, mixing well after each one.
In the pan of the bread machine I put flour and I have mayonnaise and butter cream on it. I used the kneading + leavening program. During kneading I added little by little the rest of the warm milk. The result will be an elastic and soft dough, a little sticky.
After the dough doubled in volume, I divided it into 18 balls.
I flattened each ball with my hand on the floured table.
I put a square of chocolate on each one.
You can use any kind of filling you like (jam + walnut, shit, walnut + cocoa). Be generous with the filling. :)) I just put a square of chocolate and it was a little bit.
We lift the edges and glue them, forming a ball.
We put them in a tray lined with baking paper and put them up, in a warm place, for half an hour.
Meanwhile, we prepare the meringue from:
3 egg whites
3 tablespoons sugar
3 tablespoons ground walnuts
We beat the egg whites hard, with a pinch of salt. Add the sugar and mix until the meringue becomes shiny. At the end, add the ground walnuts.
After the balls have risen, cover them with meringue,
we press with walnuts
and put in the oven heated to 180 degrees, about half an hour, until the meringue is browned.
Very good and fluffy!
