Let's start the week with an easy recipe, a recipe for stuffed potatoes that you can adapt according to your preferences. 😉
- 4 medium potatoes in size
- 1 suitable onion
- 4 thin slices of bacon
- ~ 50 g cheese
- salt and pepper
- 1/2 teaspoon paprika
Method of preparation:
Peel the potatoes, well washed, put them in a tray lined with baking paper and put them in the oven over medium heat for about an hour, until they are well cooked and the fork enters them easily.
If you are in a hurry, the potatoes can also be baked in the microwave. Prick the potatoes with a fork on all sides and put them in the oven at maximum power for 15-20 minutes.
Put the chopped bacon in a pan. I lightly fry it. Add the onion and stir continuously until the onion softens. Put the paprika, mix and set aside.
The baked potatoes are cut in half and hollowed out of the core, taking care not to break the peel and to leave an edge about 0.5 cm thick.
Put the potato core in a bowl and crush it well with a fork. Add the grated cheese on a large grater and the onion mixture. Salt and pepper to taste.
With this mixture we fill the potato peels. Put the potatoes in the pan
and bake again for about 10 minutes.
