I think you’ve noticed, since the hot season started, I’ve limited myself to very easy and quick recipes.

Today I invite you to a delicious dessert, a summer cake with yogurt and apricots . Wonderful apricots, with a subtle scent and a slightly sour taste. They went perfectly with yogurt cream and white chocolate. I also chose some blackberries, this time, from the large ones, of culture that are not so rich in seeds. It turned out great!

A cake suitable for marking a family event or simply for a weekend treat.

Ingredients:

  • 300 gr digestive biscuits
  • 100 gr butter
  • 400 gr Greek yogurt
  • 200 gr white chocolate (quality)
  • 50 ml of sweet milk
  • 5 -10 gr gelatin (I recommend gelatin sheets)
  • 30 ml of cold water
  • 7-8 beautiful, ripe apricots
  • 1 cup fresh blackberries
  • Chocolate

Preparation

Preparation takes a maximum of 20-30 minutes.
Wash the fruit, drain, then cut the apricots in half, removing the seeds.
A steam bath is being prepared. Melt the white chocolate with the sweet milk. Homogenize, then set aside to temper.
The gelatin is hydrated in cold water, then heated enough to melt the granules. You can put it on the same steam bath.

Note: I like the creamier composition to come out, that’s why I use a little gelatin. If you want more curd or use frozen fruit, I recommend you put more gelatin.

The biscuits are ground with the help of a robot. Add the melted butter, mix gently until a thick and homogeneous breadcrumbs are obtained.
Take a baking tray (preferably with a removable ring), then place the biscuit breadcrumbs in an even and compact layer. Let cool for 5-10 minutes.
Mix the tempered white chocolate with the yogurt until smooth. Add the melted gelatin and incorporate into the cream.
Remove the tray from the refrigerator, place half of the apricots on the edge, place the blackberries in the middle, then pour the yogurt composition, being careful not to drop the fruit. Let it cool for a few hours.
Garnish with chocolate chips.
It is a mega delicious, refreshing and fruity cake! Summer delicacy ready in maximum half an hour!
