Another cake that I add to the list of favorite cake recipes and that I warmly recommend. It's delicious and … where else can you say it's easy to make? It's just that the wait is a little hard. :)))

Ingredients:

  • For the countertop:
  • 200 g digestive biscuits (can be used from the usual ones)
  • 25 g cocoa
  • 100 g butter
  • For the cream:
  • 450 g of greasy and creamy cottage cheese
  • 100 ml liquid cream
  • 3 eggs
  • 150 g sugar

  • For the caramel topping:
  • 150 g sugar
  • 50 g butter
  • 100 ml liquid cream

Preparation Cake with cheese and caramel – Caramel Cheesecake:

Wheat:

The biscuits are ground on the robot. Pour the breadcrumbs into a bowl, mix with cocoa, then pour the butter, stirring with a spoon. We will get an untied composition, just some crumbs, but which when pressed with a spoon becomes compact.

  • Depending on the type of biscuit, we may need a little more butter.
  • I considered the biscuits to be quite sweet and I didn't add any more sugar, but depending on your preferences you can add 1-2 tablespoons.

We put the composition in a tray (24 cm in diameter) with a detachable ring. Distribute the entire surface of the tray, then compress the composition with a spoon or the bottom of a glass. I recommend the latter solution to be easier and more efficient.

Cream:

Put all the ingredients in a bowl and mix with a blender stick until you get a homogeneous composition.

  • If the cheese is drier, add liquid cream.

Pour the cheese composition over the cookie sheet. Put the tray in another larger tray, in which we put water, until half and put in the oven over medium heat until lightly browned on top. Turn off the heat and leave the cake in the oven until it cools, pour the cooled caramel topping on top, then let it cool for a few hours.

Caramel topping:

The sugar is caramelized in a saucepan. When it has become golden and liquid, set aside and pour the liquid cream (watch out for steam!) Put it back on the fire and stir continuously until the caramel melts and the composition begins to thicken, at which point we add the butter. Boil for a few more minutes (stirring constantly, not to stick to the pan) until the caramel reaches the consistency of sour cream. Remove from the heat and leave to cool.

Depending on everyone's preference, it can be decorated with whipped cream.
