How to prepare Egyptian cake:

It was:

Whisk the egg whites with a pinch of salt. Add the sugar and continue mixing until you get a glossy meringue.

Mix the flour with the ground walnuts and gradually add it to the meringue. Divide the resulting composition into 3. Bake 3 thin sheets in a tray (26 cm in diameter) lined with baking paper, over low heat, for about half an hour.

Cream 1:

Rub the yolks with sugar until they become like a cream. Add the starch and mix so that no lumps form. We boil the milk, and when it boils, we pour it thinly over the yolk cream. Put it back in the bowl in which we boiled the milk, put it back on low heat and stir continuously until the composition starts to thicken. Let it cool.

Mix the soft butter until it becomes fluffy, then add little by little the cooled pudding. At the end we add the vanilla essence.

Cream 2:

In a bowl, put the caramelized sugar. After it has melted and acquired a beautiful golden color, we drip it on a piece of baking paper and leave it to cool.

Beat the whipped cream, then add the "drops" of burnt sugar and large ground walnuts.

We divide cream 1 into 2 parts, which we distribute between the 3 countertops. Cover the entire surface of the cake with cream 2 and let cool for a few hours.
