But as we have to make changes to the menu, today I propose a straight turkey soup with sour cream. Hi, talk! 😉
- 1 bone of turkey leg (with some meat on it)
- 1 piece turkey breast (~ 300 g)
- 2 carrots
- 1 onion
- 1 piece of celery
- 1 parsnip
- 4 small potatoes
- 200 ml sour cream for cooking
- 2 yolks
- salt and pepper
- hot pepper flakes
- 4 cloves garlic
Method of preparation:
The diced turkey breast and bone are boiled. After boiling, the foam formed is collected as many times as necessary. Usually, after the meat is cooked, strain the juice to make sure there is nothing left of the foam. 🙂
Peel the onion, cut it in half and put it in the pan. One carrot is cut into slices, the other is put on the grater with small meshes. The same is done with celery and parsnips. Add a little salt and let it boil for about 10-15 minutes, then add the potatoes cut into 2. We match the taste of salt and pepper.
Mix the yolks with the sour cream and crushed garlic. With a polish we pour a little of the hot soup, stirring constantly. Pour the mixture into the pan with the soup, add the dill and a few hot pepper flakes, let the soup reach the boiling point again and set aside.
Serve hot, with lemon juice and half a boiled egg per serving.
