Cherry ice cream is in the top of my preferences. Prepared starting from a simple vanilla ice cream recipe , but it can also be prepared with other seasonal fruits: strawberries, cherries or bitter cherries 😉
- * 3 yolks
- * 100 g sugar
- * 500 ml of milk
- * 250 ml fresh
- * 1 tablespoon vanilla essence
- * cherries
Preparation Cherry ice cream:
The amount of cherries differs depending on everyone's preferences. I put ochiometric :)) around 400 g
First we prepare the vanilla ice cream .
Rub the yolks with the sugar and vanilla essence until they become like a cream. Boil the milk and when it boils, pour it lightly over the yolks, always mixing.
Put the pot on the fire and boil until it starts to thicken. Leave to cool, then mix with whipped cream.
Refrigerate for about 1 hour. Remove the bowl and mix the ice cream, break the ice needles that form, then add the finely chopped cherries.
The cherries oxidize very quickly, so it would be advisable to cut them into cubes as close as possible to the moment they will be put in the ice cream. This way they will keep their beautiful color and delicious taste.
Refrigerate until completely frozen.
