We can’t be in high season and not make a strawberry ice cream 😉 This time we made vanilla ice cream with strawberries, an ice cream without eggs and it came out just as good and creamy. The ice cream machine is also very helpful in this aspect and once again I congratulate myself for the investment made 😀
Vanilla ice cream with strawberries
- 3 tablespoons sugar
- 2 tablespoons starch
- 200 ml whipped cream
- 400 ml of milk
- vanilla essence
- 300 g strawberries + 2 tablespoons sugar
Preparation Vanilla ice cream with strawberries:
I left the strawberries in the fridge sprinkled with sugar in the evening. The next day I put them in a strainer to drain the leftover juice.
- With the strawberry syrup I prepared a lemonade 🙂
Mix the starch and sugar, then slowly pour the milk. Put the pot in a baine marie (or over low heat) and boil the composition, stirring constantly with a whisk, until it starts to thicken. Set aside, leave to cool and flavor to taste with vanilla essence.
Pour the whipped cream over the very well cooled composition, then the mashed strawberries.
Mix well, then put in the bowl of the ice cream machine (kept in the freezer for 24 hours). Process for about 20-25 minutes, until the ice cream hardens.
- If you prepare ice cream without an ice cream machine, mix the whipped cream until it becomes fluffy (it doesn’t need to be firm), then incorporate it into the composites. Put the bowl in the freezer, then take it out every hour and mix the ice cream so that it breaks the ice needles that form.
Put the ice cream in a saucepan and put it in the freezer for about an hour, then serve.
