For today, I propose a simple and delicious recipe, with tomatoes and baked peppers, the stars of summer in our kitchen.
You set the quantities, as you like and according to how many people you have at the table. If you want to add other vegetables (some eggplant, for example) you can do it. Let your imagination run wild :))
- baked peppers cleaned of stalks
- fresh mozzarella
- salt and pepper
- hot pepper flakes
- green basil
Method of preparation:
In a heat-resistant dish put a layer of baked peppers. Salt and pepper.
Cover with tomato slices. Add a little salt, pepper and basil leaves.
We repeat the layers as many times as we consider necessary, the last one being one of baked peppers.
Put pieces of mozzarella on top, sprinkle a few hot pepper flakes, drizzle a few drops of olive oil and put in the oven until the mozzarella melts and browns.
