I love summer stews, with lots of tomatoes, peppers and onions. If we also have wild mushrooms, stew already becomes a delicacy. It is the period when the markets / forests abound with mushrooms. It's a shame not to take advantage !! I like to take a 1-2 hour walk through the forest, recharge my batteries and enjoy the mushrooms I find. Galbiorii (yellow sponges) are fragrant, fleshy mushrooms that give a special taste to any dish. I chose to make this stew with baked bell peppers, garden tomatoes and wild mushrooms.

And because we want some meat next to the stew, I suggest skewers of pork tenderloin and sausages. You can make them from what meat you want and how whimsical you have at the table.

Ingredients:

For the stew:

3-4 tablespoons olive oil

3 garden tomatoes

6 bell peppers (baked and cleaned)

500-600 gr yellow mushrooms

200 ml of tomato juice

150 ml water

50 gr long grain rice (optional)

1 bunch of parsley

Salt and pepper to taste

½ finely chopped dill connection (optional)

For skewers:

1 pork tenderloin

Salt, pepper, your favorite spice mix

6 fresh sausages (mixed with beef and mutton)

Optional: 1-2 pieces of fresh mushrooms

Method of preparation:

We prepare the ingredients for the stew. Being very hot outside, I preferred to make stew on the Crock-Pot Express with pressure cooking. Connect the appliance to the power supply, choose the Brown / Saute function, press the Start / Stop button. Put the oil in the appliance bowl and let it heat up.

Peel an onion and cut it into small pieces. Put the onion over the oil and let it cook.

The mushrooms are first cleaned of impurities / dirt / soil, the parts that are damaged are cut, then they are quickly passed through a stream of water. Cut the mushrooms into pieces. I prefer to break them with my fingers and not use the knife at all. This way I avoid crushing them. Put the mushrooms over the hardened onion, mix with a wooden spoon and leave them until they start to soften a little, 5-6 minutes.

Peel a squash, grate it and cut it into cubes. Baked and cleaned bell peppers break into strips.

Add the vegetables to the bowl of the appliance, mix again with a wooden spoon.

Add the tomato juice, preferably a thick one, or if you don't have it, you can add 1 tablespoon of tomato concentrate. Put the lid on, the steam valve must be closed, choose a new program, press the Rice / Risotto button and the time is 30 minutes. Press the Start / Stop button. After the time has elapsed, the audible signal is heard, the steam valve is released, the lid is carefully removed. Add washed rice, water, salt and freshly ground pepper over the stew. Mix with a wooden spoon. Choose the same program again and do the same. Time  
this time it's only 12 minutes. At the end, add the salt and pepper stew if necessary, add the finely chopped greens.

For skewers: the wooden sticks we use for skewers are put   soak in water for 15-20 minutes. Pork tenderloin is a very tender meat. It does not require much preparation and it is enough to season it according to your preferences. Because I bought it the day before and so I had time, I did it as follows: in a bowl I put enough cold water to cover the meat (measure the water beforehand). Put pink salt in the water, freshly ground pepper and a mixture of spices or whatever spices you like. Leave the meat in the marinade overnight (this way the meat becomes even more juicy / tender and the fibers are loaded with flavors).

When we want to make the skewers, we take out the meat 10-15 minutes earlier. Drain the water and dab with kitchen towels. We cut the meat into approximately equal pieces. Optionally prepare another mixture of 1-2 tablespoons oil, salt, freshly ground pepper, oregano or thyme. Put the pieces of meat in the spice bowl and mix. On the skewer sticks we alternate pieces of meat with pieces of sausages.

Let it rest for 15-20 minutes. Fry on the grill or in a grill pan sprinkled with a little oil. Turn the skewers over and fry on all sides.

Optional: cleaned and washed mushrooms, cut into slices. Fry in a grill pan sprinkled with oil.

Powder the mushrooms with salt and use them for decoration or they can be put in the stew when you put the rice.
