Browsing today among the recipes that are waiting for their turn to post, I also found this cake with mascarpone cream , standing awkwardly in a corner of the folder :))) I forgot about it and it is a bit dusty poor :)) modest in appearance , but with a delicious taste. If you try it, you won't be sorry. 😉

  • For the countertop:
  • 4 eggs
  • 150 g flour
  • 100 old
  • 2 tablespoons black cocoa
  • 1/2 teaspoon baking powder
  • For the cream:
  • 100 g white chocolate
  • 250 ml liquid cream
  • 5 g gelatin
  • 250 g mascarpone

How to prepare Sandwich with mascarpone:


Mix eggs with sugar and a pinch of salt until it doubles in volume. The composition will lighten in color and become like a cream. Gradually incorporate the flour mixed with baking powder and cocoa, mixing lightly with a spatula, from bottom to top.

Divide the composition into 2 parts and bake 2 sheets in a tray (25/35 cm) lined with baking paper, for about 15 minutes. Remove to a grill and leave to cool.

Mascarpone cream:

We hydrate the gelatin in a few tablespoons of cold water.

Melt the broken chocolate and melt it over low heat with liquid cream. When it has reached boiling point, set it aside and mix well. Add gelatin and mix until it melts and the composition is uniform. Let cool for about 2 hours.

The cream will harden, but not very hard. We will mix it until it becomes fluffy and acquires consistency. We mix the mascarpone cheese separately in another bowl, then we will mix it with the white chocolate cream, mixing lightly with a spatula, until it is homogenous.

  • I syruped the countertops with a little coffee, but it is not necessary, as they will soften enough from the cream.

Pour the cream on one of the worktops, cover with the second worktop and let it cool for at least 1 hour, then portion as desired.
