Recipe Cake with walnuts and cream
The warmth of the dear ones has come! And what heat! But I don't know how it is that I can't really stay away from the oven. The poor man is probably a little tired and doesn't really want me to do the right thing, but we're doing the best we can. And that's how I baked a homemade cake today, a recipe from Cheerful (and skilled chefs, I would add 😉) If you like butter cream you will definitely like the cake with walnuts and cream, the combination of countertop with walnut and vanilla and cocoa cream is excellent! 😉
walnut cake cream cheese frosting
- 7 egg whites
- 150 g sugar
- 7 tablespoons breadcrumbs
- 7 tablespoons ground walnuts
- 2 drops of almond essence
- 7 yolks
- 150 g sugar
- 2 tablespoons milk
- 250 g butter
- vanilla essence
- 2 tablespoons cocoa
Preparation Walnut and cream cake:
Whisk the egg whites with a pinch of salt. Add the sugar and mix well until you get a glossy foam that holds well to the blades of the mixer and makes spikes to the touch. Add the almond essence, ground walnuts and breadcrumbs and mix lightly with a spatula with movements from bottom to top.
Divide the composition into 2 parts and bake two sheets in a tray (20/30 cm) lined with baking paper. Bake the sheet over medium heat for about 25 minutes, depending on the oven. I "managed" to bake one of the sheets more than necessary, but you don't do like me :))))
The sheets are cooled on a grill, along with the baking paper.
The yolks are mixed with the sugar until they become like a cream. Pour the milk and mix. We put the composition on a steam bath and boil it (without boiling it) until the composition thickens (when we mix it with a spoon the cream makes "waves" and you can see the bottom of the pot) Set it aside and leave it to cool.
Put the soft butter (left at room temperature) in the cooled cream and mix vigorously until smooth.
- The cream tends to "cut". If this happens, put the pan back on the steam bath and mix well. The cream will be repaired immediately 😉
The cream is divided into two parts, in one we will incorporate the 2 tablespoons of cocoa, the other we will flavor according to the taste with vanilla essence.
We put vanilla cream on one of the sheets,
on the second cocoa cream.
Cover with a layer of ground walnuts and refrigerate until the cream hardens, then portion as desired.
- The cream being a butter-based one tends to harden. So it would be preferable to remove it at room temperature before serving
