Walnut, cherry and vanilla cream cake

Lately we have been baking some cakes, not necessarily for testing, but to see which one we like best, to prepare them for the holidays. But for me, if the cakes are creamy, I definitely conquered mine, because they love cream cakes. If it were up to me, I'd just make cookies! 😂😂😂. It turned out great, and the cherries matched for minutes in all this combination. I used Green Sugar sweetener this time as well, instead of sugar.

Ingredients:

For 2 countertop sheets:

  • 5 eggs
  • 5 tablespoons sweetener powder
  • 4 tablespoons oil
  • 4 tablespoons milk
  • 100 gr roasted and ground walnuts
  • 6 tablespoons flour
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla
For vanilla cream:
  • 500 ml of milk
  • 5 tablespoons starch
  • 3 tablespoons sweetener powder
  • 100 gr white chocolate with sweetener
  • 100 gr butter 80% fat
  • 2 teaspoons vanilla
  • 1 small jar of pitted cherries (or from the freezer)
  • syrup (water + sweetener + macaroons)
  • 30 gr dark chocolate with sweetener
  • 50 ml whipped cream
  • 2-3 tablespoons chopped walnuts
Method of preparation:
For countertop sheets:
Separate the eggs.
Whisk the egg whites with a pinch of salt, add the sweetener gradually, mix until the meringue becomes firm.
Mix the yolks with the oil, put them over the egg whites and mix.
Add milk and vanilla.
Sift flour together with the baking powder, incorporate them easily, with a silicone paddle.
Finally add the ground walnuts.

Wallpaper a 20/32 cm tray with baking paper.
Pour half of the countertop composition, level it.
Put it in the hot oven, at 180 degrees, for 10-12 minutes.
Do the same with the second sheet.
Let them cool.

Vanilla cream:
In a saucepan, mix the milk with the sweetener and starch.
Transfer it to the heat, let the heat be suitable and always turn it until the cream thickens like a pudding.
Set aside when ready, add the white chocolate and stir until completely melted.
Cover the cream with foil, let it cool.
Mix the butter at room temperature a little, add the cold cream, vanilla and mix until the cream becomes frothy.

Put baking paper in the tray, place the first sheet on the counter.
Syrup it a little, put vanilla cream, more than half and level it.
Place the cherries in place and lightly press them with your finger in the cream.
Put the second sheet, syrup it and then level the rest of the cream.
Cover the cake and let it cool for 3-4 hours.
Mix dark chocolate with whipped cream, melt them on a steam bath, stirring constantly.
Put the melted chocolate in a pos with a very thin tip.
Remove the cake from the cold and make a pattern with melted chocolate.

Sprinkle chopped walnuts on top.
Let the chocolate harden a little, then you can cut it and serve.
