Ingredients:

  • For the base:
  • 1 yolk
  • 100 g butter
  • 50 g sugar
  • 1 tablespoon flavored sugar with lemon
  • 250 g flour
  • 1 teaspoon baking powder
  • For the filling:
  • 500 g of greasy cottage cheese
  • 100 g sugar
  • 1 tablespoon flavored sugar with lemon
  • 100 g white chocolate
  • 100 ml whipped cream
  • 4 eggs
  • For the glaze:
  • 100 g white chocolate
  • 100 ml whipped cream
  • cranberries

How to prepare Cheesecake with blueberries and white chocolate:

The base:

Put flour in a bowl. Make a hole in the middle and put cold butter, diced, sugar, egg yolk, baking powder and a pinch of salt. Mix quickly with your fingertips, then knead an elastic and homogeneous dough. Wrap the dough in cling film and refrigerate for 1 hour.

If necessary, depending on the type of flour used, add a little cold milk to "bind" the dough.

Filling:

Melt the broken chocolate pieces over low heat together with the whipped cream. Bring to the boil, set aside and mix. Let it cool.

In a bowl, mix the cottage cheese with the sugar and eggs, add one at a time, mixing well after each one. At the end we incorporate melted white chocolate.

We spread the dough in a tray with a detachable ring (20 cm in diameter) lined with baking paper. Pour the cream cheese on top and bake on medium heat for about 1 hour, until the cake starts to brown slightly. Let it cool well in the pan, remove the detachable ring and refrigerate for about 2 hours.

Glaze:

Melt the chocolate together with the whipping cream. Homogenize and leave to cool.

After it has cooled, pour it over the cheesecake and cover with a generous layer of blueberries.
